Quinoa Salad with Roasted Vegetables

Ingredients

Here's what you'll need to make this quinoa salad:

• 1 cup quinoa

• 2 cups water

• 1 red bell pepper, chopped

• 1 yellow bell pepper, chopped

• 1 zucchini, chopped• 1 red onion, chopped

• 2 cloves garlic, minced• 2 tbsp olive oil

• Salt and pepper, to taste• 1/4 cup chopped fresh parsley

• 1/4 cup chopped fresh basil

• 1/4 cup chopped fresh mint

• Juice of 1 lemon

• 1/4 cup crumbled feta cheese (optional)

Instructions

1. Preheat your oven to 400 degrees F.

2. In a large bowl, combine the chopped bell peppers, zucchini, red onion, and minced garlic.

3. Drizzle with olive oil and season with salt and pepper.

4. Toss to coat the vegetables evenly with the oil and seasoning.

5. Spread the vegetables in a single layer on a baking sheet.

6. Roast in the preheated oven for 20-25 minutes, until the vegetables are tender and lightly browned.

7. While the vegetables are roasting, rinse the quinoa in a fine mesh strainer and add it to a medium saucepan with 2 cups of water.

8. Bring the quinoa to a boil, then reduce the heat to low and simmer for 15-20 minutes, until the water is absorbed and the quinoa is cooked through.

9. Fluff the quinoa with a fork and transfer it to a large bowl.

10. Add the roasted vegetables to the bowl with the quinoa.

11. Add the chopped parsley, basil, and mint to the bowl.

12. Squeeze the lemon juice over the top of the salad and toss everything together until well combined.

13. Top the salad with crumbled feta cheese, if desired.
