Lentil Soup with Kale

• 1 cup green lentils

• 2 tablespoons olive oil

• 1 onion, chopped

• 2 celery stalks, chopped

• 1 teaspoon ground coriander

• 1/2 teaspoon turmeric

• 1/4 teaspoon black pepper

• 4 cups vegetable broth

• 1 can (14.5 ounces) diced tomatoes

• 4 cups chopped kale

• Salt to taste

Directions

1. Rinse the lentils and pick out any debris or discolored lentils.

2. In a large pot, heat the olive oil over medium heat. Add the onion, celery, and carrots. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

3. Add the garlic, cumin, coriander, turmeric, and black pepper. Cook, stirring constantly, for 1 minute.

4. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

5. Add the chopped kale and cook, covered, until the lentils and kale are tender, about 10 minutes.

6. Season with salt to taste. Serve hot and enjoy!
