Veggie Stir Fry with Tofu

Ingredients

- 1 package firm tofu, drained and cubed

- 1 red bell pepper, sliced

- 1 yellow onion, sliced

- 1 cup snow peas- 1 cup broccoli florets

- 1/4 cup soy sauce

- 2 tablespoons sesame oil

- 2 cloves garlic, minced

- 1 tablespoon ginger, minced

- 1 tablespoon cornstarch

- 1 tablespoon water

- 1 tablespoon vegetable oil

Instructions

1. Heat the vegetable oil in a large skillet or wok over high heat.

2. Add the tofu and cook until browned on all sides, about 5-7 minutes.

3. Remove the tofu from the skillet and set aside.

4. In the same skillet, add the red bell pepper, onion, snow peas, and broccoli.

5. Cook for 3-5 minutes until the vegetables are tender-crisp.

6. Add the garlic and ginger and cook for an additional 1-2 minutes until fragrant.

7. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water.

8. Add the tofu back to the skillet and pour the sauce over the top.

9. Cook for an additional 2-3 minutes until the sauce has thickened and the tofu and vegetables are coated.
