Turkey and Vegetable Spaghetti Squash

Ingredients

• 1 medium spaghetti squash

• 1 pound ground turkey

• 1/2 onion, chopped

• 1 red bell pepper, diced

• 1 green bell pepper, diced

• 2 cloves garlic, minced

• 1 tablespoon olive oil• 1/2 teaspoon salt

• 1/2 teaspoon black pepper

• 1/2 teaspoon paprika

• 1/2 teaspoon dried oregano

• 1/4 teaspoon red pepper flakes

• 1 can (14.5 ounces) diced tomatoes

• 1/4 cup chopped fresh parsley

Directions

1. Preheat oven to 375°F. Cut squash in half lengthwise and remove seeds. Place squash halves cut-side down on a baking sheet and bake for 45 minutes or until tender.

2. Meanwhile, in a large skillet over medium heat, cook ground turkey until browned and no longer pink. Drain any excess fat.

3. Add onion, red and green bell pepper, and garlic to the skillet with the turkey. Cook for 5 to 7 minutes or until vegetables are tender.

4. Add olive oil, salt, black pepper, paprika, oregano, and red pepper flakes to the skillet. Stir to combine.

5. Add diced tomatoes to the skillet and stir to combine. Bring mixture to a simmer and cook for 5 to 7 minutes or until sauce has thickened slightly.

6. Once spaghetti squash is done, use a fork to scrape out the flesh into a large bowl. Add turkey mixture to the bowl and toss to combine.

7. Divide spaghetti squash mixture among four plates and sprinkle with chopped parsley.
